Good way to start a day of Egging
Burgers and TriTip go on later.

These are easy and quick to make (but I overfilled the mini muffin tins)
I posted these several years ago, but we have lots of new folks since then.

    As requested, enjoy:

    (no claim of authorship here, I really don’t remember where this recipe comes from, but it is one my boys really enjoy)


    Breakfast Potato Bites

    1 package of pre shredded potatoes (I used simply potatoes found next to the eggs in the grocery store) 20 ounces

    3 eggs, beaten

    1/2 cup shredded cheddar cheese. (Don't wimp out and use pre shredded, the quality of the cheese really matters)

    8 ounces cooked and crumpled sausage (I like Jimmy Dean Hot) if using prepattied sausage, pulse in the blender to make crumbles

    1/2 Teaspoon onion powder

    1/4 teaspoon garlic powder

    salt and pepper to taste

    Preheat Egg to 350-375 degrees, set up indirect, platesetter legs up and cooking grid.

    Go easy on the flavor wood (I like Apple) the potatoes pick up the smoke flavor well.

    Cook sausage in a skillet and pour off grease, let cool. (Can be done ahead)

    Spray a muffin pan with Pam, mini muffin pans also work and give more crisp area. (you may need more than one pan). 

    Pour potatoes into a bowl, add the salt, pepper, garlic powder and onion powder, stir to combine. 

    Beat the eggs, pour in and give another stir, then add the cheese, sausage and mix it all up. 

    Spoon into muffin pan and bake until golden brown and tops and edges begin to get crispy (45 min for muffins, 25 min for mini muffins) check for doneness, you want the egg fully cooked and the potatoes crispy/crunchy, adjust time based on how much you filled the individual muffin cups.

    Eat warm, or cool and freeze into individual packs and heat for about 20 seconds in the microwave.

    This is a good recipe to play with.
    we will substitute Maple Sausage for the Hot and add a drizzle of warm Maple Syrup just before serving.

    The cheese you use makes a real difference.
    Make sure to cook until crispy.
