i plan to cook a rack of baby back and a rack of St. Louis cut spare ribs turbo style tomorrow. Anything I need to know other than 350F indirect for 1.5 hours?

Tuning in for responses. Never gone turbo. Are you doing a baby back vs. spare comparison?

I don't know about 350 Degrees, but I cook St Louis ribs at 275 for around 2.5 hours and they turn out very good.I would think 1.5 hours at 350 would be about right, but I would keep a close watch on them from the 1 hour mark on until they are done to be sure not to overcook.

1. They will take a little more than 1.5 hours. Toothpick test for finish. Plan on 2.5-3 hours.
2. Spares will take longer than loin backs.
Indirect for sure.Sandy Springs & Dawsonville Ga -
My normal guide line is 350 - 375, 100 minutes for baby back and 120 minutes for St. Louis.
Just a guideline. As stated, toothpick or bend test for the win.Philly - Kansas City - Houston - Cincinnati - Dallas - Houston - Memphis - Austin - Chicago - Austin

Baby Back Turbo Ribs (No flip)
350 indirect for 1hr 40 min. Before cooking: Pull membrane , rub, mustard, rub.Put on at 350 and leave the hell alone for about that time. This is called turbo ribs and I will never go back to 4 and 5 hour ribs.Note: with or w/o mustard works .. I like Bad Byron's Butt Rub / I like cherry & pecan mix for wood.If you want sauce: opened 15 min early and sauce. I like the sauce on the table.I don't cook over the 100 minutes.Be sure your temp gauge is correct.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.
