I tried looking through several reverse sear posts but couldn’t find anything specific to timing. I’m going to try my 1st attempt at reverse searing some bone in ribeyes for tonight. My question is what is the time frame to get them to 120-130 IT? Is it 2-3 hours? Need to know because we need to eat around 6PM

Should not be 2-3 hours. Been awhile since I've RS steaks but maybe 1 hour at 250*?

I think it is around an hour. It depends on how thick they are too.  If you are pressed for time just cook them a little hotter.  I usually take mine to about 110-115. It seems they crawl to about 80 then get to temp quickly.

Plan for an hour and a few minutes if in the 1 1/2" thick range and running around 250*F on the dome as mentioned above.  Then finish with the caveman  =)

  • 45min-55min to get the grill sitting at 225 and to get everything preheated.
45min to get the steak to 117 IT remove the plate setter and get it to 550-600 to sear for 1min a side and rest.

    1.5 hours (ish)start to finish.

Like others have said, give or take an hour at 250 to get to 115 IT. I start temping around 45 minutes in with the Thermapen.

Ended up reverse searing the bone in ribeyes to medium the other night. Cooked about 45min at 250 then 1.5min on each side at 550 they were 2” thick steaks
