The fabric should be tagged with non-flammable if compliant.

Build, it will last decades longer, and you can add power if you want for lights/music/blenders/exhaust/etc

Please, please go to your local fire department and ASK them about this. They know more than you or I or anyone else on this forum (unless they, too, are firefighters), so be smart, and make your decision actually knowing what you're doing. Maybe this is a fine idea. I just urge you to find out!

FWIW, I was a firefighter in a prior life, and - to @Theophan's point, cooking too close to combustible materials is never recommended. When you say build i'm assuming you mean a wooden pergola, correct? I think a pergola would look a lot nicer than a fabric gazebo. Plus it would allow you opportunity to expand it later if you so choose. You wont have any issue with a pergola. They are pretty easy to build too.
