Reverse sear as you intend. Foil the exposed bone unless it overhangs your egg. Lots of salt and pepper. Enjoy.Sandy Springs & Dawsonville Ga

It sounds like you already have the plan. I run Rib Eyes raised indirect to 110-115 IT and rest for 10-15 while I stoke the fire to red hot, then put my CI grid on the ring and sear the hell out of them. For 2" steaks I seriously char them. I see you have a woo, as do I so that's my go to.........but I think I'm going to do the raised indirect the same and then just throw them on the coals 'caveman' style next time.LBGE, PSWOO, 36" Blackstone, MasterBuilt smoke box- Playing with fire in Three Rivers, MI
