My gasser has been sadly neglected since I bought my Egg. I do use it occasionally to do a final sear after a low and slow on the Egg. But I have been intrigued with all the posts on the Blackstone. However, I don't really have the space for a new big grill, and a small one seems not so useful. I got to thinking (a dangerous endeavor indeed!). I could get a 19" x 28" x 3/8" thick piece of A36 steel and replace the grid on the gasser. This would give me a large griddle surface with four independent burners. There is a large grease catcher on the grill, so I don't need the walls that the Blackstone has. Does this sound like a reasonable idea? Is A36 the best choice? It is way cheaper than stainless, and I am in a fairly low humidity area with a covered cooking area. Thanks in advance for any suggestions.

A36 is what you want. And it's better than stainless in this setting.

If it were me, (and it was a few years back), I would sell the gasser for what you can get, and then purchase a dedicated griddle.
I can almost guarantee you will be pleased.

I do the same with a 1/2" thick baking steel set on my gasser grate and it tops out around 750F. I only use it for searing and quick cooking tho. Sears a SV steak in about 10 seconds. A36 is a better heat conductor than stainless. There are no stainless griddles that i know of in commercial cooking equipment. The Blackstone is not a stainless griddle plate. You will have to put a polish on the plate and then season it. Are you sure no grease will run off plate down on burners? Might be risky.

get a griddle built for a gasser. I have used my blackstone 22" griddle top on my gas grill and it works just as good as it does on the blackstone burner.

The gasser is built into a custom brick enclosure and is not going anywhere easily. I'm not sure if grease from the griddle just on the ends would pose any more of a problem than grease dripping through the grill grate all over the burners. I have seen some pretty good flareups cooking burgers and bacon wrapped chicken breasts. I suppose I can always give it a shot. Cheaper than a Blackstone and won't take up any room. I converted my older weber genesis into a dual purpose griddle. I use grillgrates (3) full size 24" and (1) gap panel 24" reversed. This gives an end to end surface with some open holes, great for veggies etc (works for eggs as well, as eggs cook up or too firm to go through the holes. If I need a solid surface, I have the 22" stainless "little griddle" that just goes on top. Grillgrates are aluminum so no rust.
