    I know!  If I didn't have a PR roast aging and finishing soon, one would've come home.

    I couldn't resist on the boneless chops, and bought 4.  There was a guy rolling sushi there too.  May have to explore that next time.  We so needed this to happen.  B)

    Well let me know if it cooks up as well as it looks raw ! I just had 18 lbs of ribeyes cut up at Fareway last week when they were on sale plus a couple of pork loins...  need more freezer space.

    Hmmmmm, we dropped our Sam's Club membership a couple decades ago. This might make me rethink my position on giving money to the Walton's.

    My sister is a Sam's Club member so I'll ask her if they've remodeled the store closest to us. Problem tho, she's a vegan so she may not have even noticed the meat counter section. :)

    We have continued to keep both SAMS and COSTCO. Whether your Sam's will carry Berksire or not is a real gamble! One thing I have noticed since CostCo entered our market is Sam's has started to carry prime.

    @RRP I have not been to the Peoria Sam's in several years.  Would you say meat counter is on par with the East Peoria Costco?

    No, but like I said they have started to carry some prime meat. Space wise the overall meat selection of COSTCO is at at least twice of what SAMS offers.

    It is a wonderful breed, my favorite of the heritage breeds I have tried.(Duroc, Mangalista, Swabian Hall, Tamworth, Red Wattle).  Get ya some!
    Look at the marbling earlier in both chops.
    Bacon too.

    Paired with Iowa's finest, and WI sweet corn.  The juices pool up.  So moist....tender.

    Looking forward to hitting up the Freight House Farmer's Market this weekend, and a trip Sat to Camanche, for a truckload of Cherry along the river.

    Wow! That looks fantastic! I'm an Iowa native, and agree that there's nothing finer than a true Iowa chop. Well done.

    Man, our Sam's still sucks. They only have Choice beef.  The two briskets I got there were over 50% trimmings. They just updated the whole checkout area so at least you don't have to stand in line fo 45 minute. Maybe the'll get around to the meat dept someday.

    @thetrim Very interested in how your flat turns out. Good sized briskets are hard for me to find around here.

    I didn’t buy that.  No way in heck.   I’m down to my last Texas imported HEB Brisket.   After this one is done, I’m gonna have to figure something out.
