A little bit of wild game for this Sunday evening.

Nice. I love elk burgers.

Came out a little dry. But had to make sure they were done with the wife being pregnant. Plus, she didn’t want to mix with any ground beef.

I've never had elk burgers, but I know that I've heard of people mixing different kinds of fat with venison to make it juicier. Maybe elk would benefit from that, too. Still, I bet they had great flavor!

I usually mix with a little bit of ground beef. But, I didn’t have any at the house.

The sheer fact that they weren’t hockey pucks when they came out is a solid win.
I cooked burgers for years in CO with elk. Always did a 50/50 blend. She had some clients who she prepped meals for...I always felt like burgers were the hardest for quality control.
I believe the answer is high heat and medium at most. My wife was pregnant when I was cooming them.
