Pulled when the brisket was probing nicely, at readings between 203 and 210 all over. Slicing and serving around 3:00pm. Getting a good vibe from this one. -
I'm guessing you were able to roll the cook on one load of fuel. Most impressive.
That meteorite looks great. I hope you know the grain pattern for the slice and dice

Took note of the grain pattern last night, but no longer recall. I’ll have a close look before slicing.
