    My buddy is doing a whole hog in his Caja China and making tacos with it - he usually has 1-3 women come to cater who do a taco bar with some of the pig with rice and beans.

    Getting ready to put PigShots on the large for a Derby Party we have every year at a former coworker's place in Edgewater a bit up the road from us. Always a good time. Going to pour a beer for LS when the cook is about done. Will post pics in a little bit.

    I went by Ace to restock on Rockwood. Tomorrow I will do Peri Peri turkey legs( exact recipe tbd). Other than that just chores around the house, got to install a new dog door.

    @Fred19Flintstone - just put two batches of PigShots on, 2 level using firebricks and my original SS grate.  Dome temp is at 280 and steady using Rockwood.

    Des Moines / Ankeny plant. Bittersweet as she will not return home for the summer, but, is entering young adulthood quite well. I’m very proud. 
    Lot of good ties between ISU and Deere.  They announced recently Deere building a facility at Iowa States research park.

    @Fred19Flintstone - Mostly a fail putting these together on my part.
    Some of these were tested while toasting Little Steven. The rest went in the trash. Some made the cut but not many. I can put these on friends grate when I get there to finish off the bacon.They do taste good. Heading out now.

    Back from the Derby/Cinco de Mayo and the PigShots heated up well. All that was left:
    Had rain come thru a couple of times but it wasn't too bad.
    Hostess had horses for many years but had to give them up when she got a new job, too much work time and not enough time to work the horses. 
    Our hostess.
    Host is the guy in red shirt who I worked with for many years.

    Empanada's were fried here - spicy beef, raisins and green chili's. Very tasty.

    Some of the peppers our host grows for his rubs and sauces. Need to get some of them for the "Rub and Sauce Exchange" soon.
    Gator's in the pond. Used to be much higher water line but hasn't been enough rain for several years even with the hurricanes. That is all I have to share @Fred19Flintstone. Hope you enjoyed it.

    As for the flags, the folks attending have proper respect....now get into North Carolina and Tennessee....not so much. 

    I remember the Home Depot kid projects from back in the day. Great times....looking forward to a grandchild or two some day. Perhaps back at it some day. Cheers!
