Hey everyone!
My department at work is having a Salsa/Dip cookoff challenge for Cinco De Mayo and im looking to dominate....
Does anyone have any showstopper recipes up their sleeve that they are willing to share to help me annihilate the competition?

I don't have my wife's recipe, but she has me smoke a couple of big eggplants cut in half lengthwise for baba ganoush and it's FAN-TAST-IC ! Smokey and big, deep, savory flavors.

Not sure the following meets your criteria but I enjoy the Roasted Tomatillo Salsa by Rick Bayless, linked here:

Creamy avacado salsa/dip. So good and sooo easy.

for some reason the dip thats is first to go is the old school simple and delicious boneless buffalo wing dip HOT HOT. I Make a hot and a mild and a sweet hot version the sweet hot one always goes first over any other dip we put out and I have put out some great ones plus we have had dip parties where everyone brings their favorite and the tried and true buffalo dip almost always wins. If you want recipe let me know and ill dig it up

Buffalo chicken dip is a hit at work potlucks. Smoke the chicken.

Cast Iron Mexican Layer Dip. I got this recipe yesterday in an email from America's Test Kitchen. I haven't tried it, but it sounds good and most of their recipes that I have tried are excellent. Good Luck!

This dip is awesome.
Mix together 16oz sour cream, one package of softened Philly Cream Cheese and a package of taco seasoning mix. Layer in bottom of dish. Add a layer of rinsed black beans. Follow with a jar of your favorite salsa. Add a layer of shredded lettuce and finish it off with a healthy covering of Mexican style shredded cheese. I have been known to add some leftover smoked chicken too. The Tostitos Scoops are my go to with this dip. -
