Tamarind-glazed wings

Decided to make some wings last night. Cornstarched them in the fridge for a while, then used a rub that was mostly a basic homemade rub, but with the last bit of some Raging River and some Jamaican Firewalk. Smoked with apple for a couple of hours at 200, then raised the temp to about 350 and glazed with tamarind sauce. Very tasty!

Thanks, all, the tamarind sauce is delicious. Just the right mix of tangy and sweet and savoury. And this method of low and slow for a couple of hours and then increasing the heat at the end is now my go-to. I think the fat renders out this way so you get crispy skin (even without the temp increase at the end, which I only do to set the glaze). I also think the low and slow gives a much wider margin for error.Toronto ON
