Cold oil Dutch oven Fries and burgers tonight. Wow. Minimax

Started yukon golds in cold canola oil on woo over a hot fire results were spectacular as evidenced by a picky teenager wolfing the fries and burgers down like he hadnt eaten in a week.
If anyone made fries on bge with a wok, id appreciate sharing the eggsperience the lodge 5 qt dd with the minimax are quite a workhorse combo

So...you put cold (room temp) oil in your dutch oven, with the fries in it, onto the MMX? I'm intrigued. How long does it take to cook them? What difference do you notice?EggMcMcc

Do you have any trouble with the temperature of the oil getting too high cooking on the egg? Did you fry with the lid open the whole time or did you close the lid to keep temps stable? I like this idea for frying over a wood or charcoal fire.Coleman, Texas

I learned this from americas test kitchen. Go to their youtube channel and watch burgers and fries episode. Yep. Use yukon golds, run thru fry cutter right into cold oil. Make sure fries are covered with oil amd set do on woo on preheated egg. Took 1t to 20 mins for oil to boil, then waited another 15 mins amd began to stir the fries. Nope. Not at all hot fire underneath. Intried closing the mm during rhe fry just to see if it would close but id open it right back up. Super easy be sure to not stir them until 15 min after the oil is in full boil mode...after the post boil oil 15 min time you should be another 15-20 mins and dry fries on paper and salt them alot .mEGG_My_Day said:Cold oil fries? It looks great. Interesting set up with the burgers with CI grid and plate setter. Do you keep the plate setter in the entire time? I imagine this helps with the grease dripping on the coals and flair ups.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

Donned some weber silicone coated gloves and pulled DO out, pulled woo out and then added some coals, the platesetter to the woo amd put the ci grid on top. Fries were on butcher paper drying out a bit while burgers cooked. I just wanted to demonstrate all of this could be done on the minimax amd with a little advance planning, some careful placement of hot items like a ci DO this all worked out great -
