Simple beef dino ribs. So easy and so good.. Salt lick rub with lots of extra coarse ground pepper, post oak chunks for smoke.
Got the green egg to 270, put on my machine, and played 39 holes of golf. (21 on my own then 18 with a good friend. I don't play through if nobody is behind me.. I play the hole again). That was about 8 hours..
Came back, and my brisket popsicles were ready.. Very wiggly and probed soft just under 195.

It's hit-or-miss at my Costco. Look for a yellow shrink wrapped package, usually next to the briskets.Large Egg, PGS A40 gasser.
