Asparagus. Put a little oil on it, salt and pepper. Toss. I'll do it on the Minimax and put my mini grate at 90 degrees i=on top of the Minimax grate to keep them from falling thru. I also sous vide some corn on the cob, add one pat of butter to the corn w a little salt. Sous vide for 1.5 hours at 183F. Finish real quick like on the egg just to get some color on them. Carrots are also unbelievable in the sous vide.

Ooh, that corn sous vide sounds good. Will have to try it.

Almost all my veggies are done on the stovetop or instant pot. Tried SV a couple of times and was seriously underwhelmed. Way too much time for no improvement. Steam, sauté or just grill. Far quicker and just as tasty.
Love veggies! Tonight's dinner was oven roasted potatoes with garlic and rosemary, green beans from the instant pot and corn on the cob (Boil water, turn off heat, add corn for 10 minutes). No meat. Delicious!I hate it when I go to the kitchen for food and all I find are ingredients!

Another favorite; sauté some shallots in a pan in a bit of olive oil. After they get happy, dump in a bag of frozen peas and a little s&p. Serve with a squeeze of fresh lemon juice. Delicious!
Another one... sauté yellow onion in evoo until softened, add Brussels sprout halves, and cook til charred. Mushrooms too if you like.I hate it when I go to the kitchen for food and all I find are ingredients!

How bout some broccoli rabe. Get water boiling. Salt heavily. Throw in the rabe for 2 mins. Remove into an ice bath it goes. Dry it out w paper towels or a dish towel. Literally squeeze the water out of it. Saute in some good quality olive oil w some minced garlic and/or shallots.
You can do the same with spinach. It's amazing.

I like roasted broccoli. Take some broccoli, drizzle with oil, sprinkle on some garlic salt and some crushed red peppers and roast at 400 for 25-30 minutes. Delicious. You can do the same with mixed veggies like cauliflower, carrots, sweet potatoes and more.

Spaghetti squash.
Cut in half. Take the seeds out. Sprinkle on some rub. Pat or two of butter. Foil. Egg or bake at 350F x 35-45mins.
Run a fork through each half and serve. It’s kinda like... spaghetti

Not in an Egg, but I like to do sweet potato fries in the air fryer. Mix the cut up sweet potatoes with two teaspoons of melted coconut oil and shake on Chinese 5 Spice and a little salt. In an air fryer I would cook them for 20 minuets. You could do the on the Egg in a single layer on a sheet pan , indirect probably.

Sweet potatoes @300-400 indirect preferably whole with skin on, just washed and rub them with some oil, peel you just pull off when done they turn out better than any other way I have ever done them.MMx, my not so large BGE

big vote for the rattatoulli, i add some stewed tomatoes and some cheese to it. veggie kabobs with marnated mushrooms and red onion or vidallias, roasted fennel and beat pieces, one of my favorites is just grilled oyster mushrooms with oil and rub, grill hot til the edges crisp up

Collards are your friend, not on the egg, but super, super easy in the Instant Pot. Full of vitamins and fiber, yet practically zero calories, carbs, or fat. By themselves they taste bitter or bland, but add a heaping amount of pepper/vinegar sauce and they are to die for. So good, and so perfect for your low carb diet. Don't forget the ham hock!

@Kent8621 Remember that some veg have more carbs than others. I've been LCHF for about 6 years now and stay away from legumes (Petite peas, haricot vert are exceptions), potatoes (including sweet potatoes & yams), and corn. Root veg are generally good, however carrots have high sugar (carbohydrate). Leafy greens and cruciferous veg (broccoli, cauliflower) are great. I also stay away from fruit, including tomatoes.

Parsnips, carrots, rutabaga, and a little garlic, onion, and salt. Cube everything up, toss in olive oil, and roast until tender. It may sound nasty but it tastes like veggie candy. Good for you too. You are welcome!Michiana, South of the border.
