I always do a butter milk brine for chicken. I do 1/2 cup of kosher salt, 1/4cup of pepper for every half gallon of buttermilk. I would think a half gallon would be more than enough for a 5lb chicken. if you like things with a little kick, add 1 tablespoon of cayenne.

I'd use 8T of white sugar and 8T of canning salt dissolved in 1 quart of water. And for time go at least 2 hours though if you can go 3 hours. Then rinse.kweitz said:Salt, sugar and liquid amounts for a 5# chicken?Re-gasketing the USA one yard at a time -
