Saturday night= pizza night

Just a few pies for the kids and the grown folk. Nothing special. Pepperoni, fresh sausage, anchovies, spinach and fresh mozzarella. I must admit, I think I've perfected the art of pizza on the egg .

2 questions, if I may?
Crust? home made or store bought?
Dish? Cast iron or ceramic for a deep dish or pan style?
We have a market nearby which kicks out some of the BEST sausage. We buy about 1/2 and 1/2 'spicy' and 'sweet'. Nice. -
We decided on pizza Saturday morning so we had to go with frozen store bought (Tiseos I believe). I used it when I first started making pizza instead of waiting time making homemade. As far as my dish, platesetter legs down. Three bricks laid on their side (3" lift), then pizza stone. These were fairly thick so I didn't run the temp up high like normal. A majority of the cook was at 550.

if you have a trader joe's near you they sell pre-made dough not frozen... it's pretty good
