Tri Tip reverse seared on Mini griddle

I'm always looking at the meat section for a nicely marbled tri tip.  This little one (1.56 lbs) caught my eye:


Got it seasoned with some Santa Maria Rubs and onto the Mini at 235 F with a chunk of red oak for smoke:

Pulled it off at an IT of 118 and let it rest while I got the mini griddle heated up in the Mini Egg.  Griddle was over 700 degrees when I put the tri tip back on for a sear:


Flipped a couple of times:



Not shown in pics but I used a Lodge round cast iron press to get better contact with the griddle.

Pulled at 129-130 IT:


Sliced and served:

    Oh my gawd!  That is one of the best looking tri-tips I've seen pre and post cook.  Wish I could something that pretty around here.

  • Outstanding.  2 tri tips in the freezer.  One coming out for the weekend.  Will be a first attempt and you've given me a goal!
    It's a 302 thing . . .

    Oh my gawd!  That is one of the best looking tri-tips I've seen pre and post cook.  Wish I could something that pretty around here.
    Unfortunately they don’t usually look so marbled here either.  

    I recently ordered some prime grade ones on sale from Creekstone Farms that look very good but not quite as nice at this one.
