Game day chili

First order was to do a coarse grind on a smoked chuckie, then on to veggies and garlic,onion. Everything will wind up in the slow cooker

Browning the grind with chili powder before going into the cooker. The wife puts all this together. Tomato paste, beef base and water, and of course some beer and other various spices. Small can of V-8 and a can of white beans -
That’s gonna be some good chili. Don’t know what the weather is like where you’re at but it’s a perfect day for chili in Cincinnati today.

Nibbling and peppers in the CI. Money shot of the chili to come, we did a taste and it was great. Hurry up and let the dogs out

We both loved the chuck ground up and thought that it had a better flavor than ground beef, plus we cut out the larger pieces of fat. It was a winner. We used the crema on top of the chili.

Basically that's about 2 1/2 lbs meat , 5 table spoons of chili powder, and all the other seasoning is about 1 teaspoon. My wife puts this together and has done this for years.SloppyJoe said:

2 1/2 lbs meat
1 onion diced
2 red peppers
5 cloves garlic
5 til chili powder- dark
1 tbk smoked paprika
1 tsp roasted cumin, coriander, oregano, seasoning salt
1 tbs granulated onion
1 tbs steak season
1 10-12 oz v8
1 16 oz tomato sauce
2 squirts tomato paste
1 tbs beef base- cup of water
1 tsp of cayenne pepper ( to add more heat if wanted)
she also added some really hot peppers (pic) her chili has to be hot and spicy. She makes like 3 versions of this based on the peoples taste. She did not put the white beans in this time.
