Florida Cornish hens

My wife and I finally arrived at our vacation home. Trying a 3 month stay this time. My first cook was a couple of Cornish hens on the Akorn Jr.  We really enjoyed them with intstant pot risotto (mushroom)


In the bush just East of Cambridge,Ontario

    The problem with a problem is that you don't know it's a problem until it's a problem, and that is a big problem.

    Those look great!  Anyone ever spatchcock a Cornish hen? I haven't, but it should be easy and a fast cook.

    Sure, when I don't use the rotisserie in my toaster oven. =) I never eat more than half of one anyway, so sometimes I split 'em the rest of the way and cook both halves. The second half reheats nicely in the same toaster oven.
