New Staub Cocotte- What to Cook for Maiden Voyage?

I decided after two years I am ready to branch out from grilled chicken, ribs, and pork butts! I found a Staub 4 quart cocotte on sale for $99 (sur la table), and want to do something that fits the cookware. What do you recommend for an "easy" first cook?

If you want to go simple French but classic, make “eggs en cocotte”. This easy breakfast dish usually features eggs done in individual vessels (max two eggs in each), but I do not see why you could not do more simultaneously in your bigger vessel. -
