Cooking fish on the egg? Catfish,cod flaky type fish

good morning everyone
whats the best way to cook flakier type fish on the egg? Salmon is a little firmer and I’ve had good luck grilling it but catfish or cod may be a little tougher to keep together,anyone using those fish baskets?

I’m kinda thinking now trying the cast iron skillet,can’t remember what size fits the lbge, I’ll have to search that.i remember reading here someone cutting off handles to make one fitcaliking said:Frogmats have worked well for me. -
Last time I did some Crappie I used a cedar plank and then pan fried in cast iron. Depending on if your willing to cut the handle of your skilled. I took new age lodge I think it was a 12 but had to trim the handle which is now just a nub.Captainjimpark said:

This is on the medium and the lid wouldn't quite shut.

I use one layer of HD aluminum foil for most fish. Cured salmon for smoking or skin-on salmon for grilling goes directly on the grille. Fish baskets work nice for flaky fish too.Michiana, South of the border.

Run me out in the cold rain and snow -
I use a CI skillet a lot of times when I blacken fish, still have enough room on the large to grill up some tortillas for tacos!

I would also consider a cast iron skillet as the best way to cook a flaky fish. The thinner the filet, the hotter the pan. Brown one side. One flip. Done. Happy cookin'! Chris
