Rack of Pork (Slight Return)

For any unfamiliar the pic below is a cut from our holiday rack of pork roast. The cut includes a baby back rib with all the rib meat along with some darker meat around the one side and the whiter pork loin inside. This roast was so popular with the fam I felt compelled to re-post for any new Eggsters who might not know, especially since I only see it during the holidays at Costco. It cooks up in less that two hours and the only way it isn’t a hit is if you way overcook it. We did ours until center hit 147F, then let rest and served. Pork prime rib. Happy New Year!!!

EggDan, yes indirect at 275-325F
works well. Marinate and or rub and or sauce at the end increase the matrix of options and add layer(s) of flavor. -

Bummed to hear they are seasonal.... one of the best things that has ever come off my egg! Just happened to see them at Costco. Grabbed one and it was dynamite!! Go Cains!
