Rib Roast with my new Flame Boss 300

Did a rib roast in the Big Green Egg today. Grilled at 250 until the meat hit 120 and then baked for 5 minutes at 500 to render the fat for Yorkshire pudding. It was my first chance to use the Kick Ash Basket and Flame Boss 300 that I got from my wife for Christmas. Was really impressed with the FB300. The history graph says it all, temp stayed with a few degrees of 250 for the entire session. Thanks to @stlcharcoal for the great service!
