Cochinita Pibil (picture heavy)

My bride wanted to try cochinita pibil, and we found a recipe at seriouseats.com. We served it with black beans and cilantro lime rice. It turned out to be very tasty and fun to cook. The banana leaves came from our backyard.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

I've never tried this cook, but it looks delicious. Banana leaves are not available here in Oklahoma, but I like the way you used them.
Any road will take you there if you don't know where you're going.

That's a great looking plate! Do the banana leaves add any flavor or would butcher paper accomplish the same thing? Fresh out of banana leaves up here.
I hate it when I go to the kitchen for food and all I find are ingredients!
