So. 18lbs. I iced the breasts for a good 45 min prior to going on the egg. The breasts are now at 160. Thighs at 155.
What would you do!?

I'd go a little longer.Richmond and Mathews County, VA. Large BGE, Weber gas, little Weber charcoal. Vintage ManGrates. Little reddish portable kamado that shall remain nameless here. Very Extremely Stable Genius.

I would cut the leg quarters off and leave them in longer. The breast is done.

How long do you think it’s safe resting on a counter when I do pull? People may show up late. -
I'd let it ride a bit longer then either let it warm in the oven or in a cooler. Just remember not to let it go under 140 before y'all eat it.Slumming it in Aiken, SC.

I'd check the breast in multiple spots. Mine did the same cause my probe was in a hot spot.-----------------------------------------analyze adapt overcome2008 -Large BGE. 2013- Small BGE and 2015 - Mini. Henderson, Ky.

Oof, tough break. You could try a couple of things. First, if the juices run clear and the leg rotates freely, it might be done. Easiest might be to just remove the breasts, keep them wrapped, and let the dark meat finish.

What I have done in this situation is cover the breast with foil. I place a clean wet kitchen towel on the foil covered breast.(Breast is covered with foil after it has reached close to the desired temp) This effectively puts the brakes on the cooking of the breast, letting the legs catch up.
I know this advice is coming too late for your cook today, but maybe it will prove useful in the future.

Too late for the immediate issue-but the current (as I recall) food safety guidance (and conservative for sure) is "no more than 2 hours in the 40-140*F window". FWIW-Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.
