Beggars Chicken with Cornish Hens

Beggars Cornish hens. No turkey in this cook. Chinese recipe for cooking chicken done with Cornish hens wrapped in moist clay. Birds stuffed with ground pork, mushrooms and Sichuan pickled vegetables after marinating in brandy and five spice powder overnight. Each bird was wrapped in parchment paper then with clay. One hour at 350 and the mini-max Turned out great. Moist and nothing like anything I have done before.

    Thanks for asking. Busy with work, keeping the mini-max hot Wife has had some medical issues that are much better now. Look forward to cooking with you in Salado.
