Smoked Holiday Cheese

I got up early this morning and took advantage of a cool morning and smoked some cheese.  Havarti  is back in the rotation for the Christmas Holidays.

Any road will take you there if you don't know where you're going.

    What wood smoke did you go with?
    How long?
    I'm doing several pounds in the morning, going with a mix of Maple & Cherry pellets.

    I'm doing several pounds in the morning, going with a mix of Maple & Cherry pellets.
    I used apple pellets mixed with apple and cherry chips in an Amazn cold smoker for 2.5 hours. Your combo of pellets sounds good to me as well. I add the wood chips on top of the pellets because they produce more smoke.  It seems to make the smoke flavor a little sweet as well.

    I've got some apple wood I can sliver into the pellets.

    Ha! I already have multiple requests from family and coworkers.  I'll end up giving at least 10 packs away.  That's one of the reasons I smoke cheese, so I don't mind.

    Same here, I took some smoked cheese into work for a team event and now there's a metaphorical queue of people at the Egg waiting to get their cheese smoked :). Sharing is caring.

  • Agreed that it's a great gift. I have family members who buy blocks of cheese just to have me smoke it for them.

    My Amazen smoker was just delivered yesterday. Going to try it out today on some cheese!
