My wife picked up a sirloin tip roast on sale today. It's about 2 lb.

Maryland Pit beef! Reverse sear (or SV/sear). Cook to medium rare. Slice thin on slicer if you have one. Serve piled high on a kaiser roll with horseradish. Usually gets eaten pretty quickly. Cheers. Chris

i do pitbeef and deli beef with it alot. pit beef served warm with a heavy sear crust, or deli beef with a light crust served cold sliced thin. i like the pit beef sliced thicker

Will it slice well on the slicer after it's cooked? Sorry, I've never sliced cooked meat. This sounds delicious and I've got a new horseradish Mayo I've been waiting to try!

i usually hand slice the pit beef but you can cut it on a slicer fine, just give it a good rest first so it doesnt lose juice. i do an 8 to 10 pound chilled deli beef once or twice a year, definitely need a slicer for that

Not as easy as slicing cold meat on a slicer, but you can get it done. -

Turned out great! Sous vide it for about 4.5 hrs then seared it. Sliced thin on Kaiser with horseradish Mayo, onion rings and a cesear salad. Great meal, thanks!
