Need a good Pork loin recipe

Hey guys, I need a good Pork loin recipe. I was thinking of going with lost of herbs and garlic, but am open to all suggestions.

I have an awesome creole pork loin recipe that I modified from an Emeril method...
- Season and grill a whole tenderloin, so that the outside is well charred but the inside is still rare. Take that off the grill to rest uncovered somewhere.
- Add a heavy steel pan or CI to the fire and saute peppers/onions/celery until soft with some fat of choice, add flour, keep stirring so it doesn't stick, add more oil if needed. Season with creole rub.
- Then add a beef stock to it and reduce till it's a brothy stew. You can add a lot of stock.
- Now the fun part... slice that pork loin into thick medallions and add it back in to the mixture on the stove. Stir in some spicy brown/creole mustard and more creole seasoning.
- Then add seafood of choice (shrimp, scallops, whole clams, shucked oysters, whatever).
- S&P to taste, when the seafood is done the pork will be tender and you'll blow people's minds. Toss in some chopped green onions or other fresh herbs when you take it off the heat.
May not be what you were looking for, but this is a fun easy cook and you don't have to worry about if the pork is done or not, since the 2nd cook (when sliced) does a perfect job.

That's a great start, to that I would add tomato,onion,peppers(hot if you like spicy), and some chopped up prosciutto sausage, and your favorite cheese.
