Pulled the roast off and cubed it up. Letting it rest overnight. I consumed a few tidbits in the interest of quality assurance. I might use the same rub for my next brisket. It was that good. I’ll get the party started mid morning tomorrow. The magic 8 ball suggests my prospects are good.Michiana, South of the border.

It’s a pretty raw day here today. Perfect for chili. I won’t bore you with photos of all the prep work. Malcom’s video does a fine job of that. My only departure from his method was to brown the sausage in the cast iron pot. It was extra lean so I didn’t bother draining it. There simply wasn’t much of anything to drain. I left out the cayenne too. I can always add that later. Too hot and Momma won’t partake. The Egg is stable at 300* and I tossed in a couple small chunks of pecan to add some smoke. It should be ready about halftime.

Done. We both ate lunch earlier so this will sit and rest until dinner time. It’s pretty tasty!

I thought the chili was awesome. Bride of Teefus felt it was too hot and had a turkey sandwich instead. This even though I omitted the cayenne and hot sauce. In her defense, the chipotle chili’s were pretty warm. Maybe next time I’ll smoke some of my own milder peppers. Huge flavors though and I call this a win.Michiana, South of the border.

Worlds Greatest Big Green Egg Chili Recipe
1 Can Red Kidney Beans
1 Can Chili Ready beans with sauce (heat depending)
1 Can Diced tomatoes w Onion & Garlic
1 Can Stewed Tomatoes (or stay with diced and more veggies)
1 Tomato paste (small can)
3 Lbs Ground beef (90-10 preferably)
½ bottle Big Green Egg Vidalia Onion Sriracha sauce (THE SECRET SAUCE AND A MUST HAVE)
Big Green Egg Viva Caliente or Chili powder (sprinkle in to taste)
Set up BGE direct at 400 and use your Big Green Egg Dutch oven to brown the beef, once it is good and brown remove from fire. Add all ingredients in the oven and remove grid and add 3 handfuls of Jack Daniels chips directly to fire, replace grid and add the oven, keep lid open to get the chips smoking and close the dome and shut your top daisy wheel to keep all the smoke in the dome. Do not open lid for at least 15 min., stir occasionally and bring to a boil….. ENJOY!!
