I bought two cryovac'ed bags of "Choice Back Ribs Fingers" from the base commissary. I've never seen them before and figured why not?
They're beef, and look like end trimmings from the ribs.
I cooked them hot and fast on the BGE with a little rub and some cherry smoke. They definitely have some chew to them, but they taste great.
Has anyone else here dealt with them?

I never had a solid idea of what I was getting looking into the cryo bag. When I saw them this evening after pulling them out, my first thought was hot and fast.
Chewy, but delicious.

I went to the butcher last weekend and showed him the difference between his baby back ribs (taken right back to the bone) and the pictures on here with plenty of meat on them. Should be picking some up this weekend.DoubleEgger said:Those look like what @Eoin cooks across the pond. -
I've had and cooked those a number of times. One of the best meals I had was from a Jamaican cafe, covered w. their home made jerk paste.
I suppose they don't appear often because they have quite a bit of bone to meat ratio. I've done them like rib tips/spares, but they don't take as long. About 3 hours as I recall.

Would be a good choice for Korean style tacos I would think.
