Corned Beef ... ideas?

Found a corned beef in the back of the freezer from St. Pattys day.

I went to soak it for 24hrs .... got sidetracked and it soaked for 72hrs in my fridge.  I drained it, patted it dry and have it on a rack in the fridge drying out.

I don't have time to cook it till Friday, unless I sous vide it.

Should I just keep it drying till Friday, should I sous vide it.  Should I season it now or wait till Friday?

    It's already pickled and boiled if off the shelf.  Reheat above 140, slice and serve Reuben's.  Nothing better.

    Whoa.  Thanks for the heads up on that.  Didn't realize it was already cooked.  It was a Bill Baileys from Costco.  Guess I should read packages closer.

    corned beef is not always precooked, ive never bought one pre cooked. i believe the bill baileys is though. the stuff i get isnt even red most times, just cured in regular salt, its grey

    Good point.  Read the label to be sure whether or not it's been boiled.
