I was inspired while looking at the breakfast discussion and decided to try the breakfast fatty. I'm glad I did. It was cooked a bit hotter around 325 for 1.5 hours. Meat Church recipe calls for 275 It came out delicious. My only change would be to have a bit crispier bacon. I used think cut- do you guys have any recommendations on getting the bacon crispier. Thinner bacon? Higher temp? longer? Thank you for taking a look and for your thoughts.

@dbennett561 Man that looks awesome. I think any of your ideas will make crisper bacon. You can even precook bacon a little before you wrap.

@dbennett561 Nice looking cook, If you blanch your bacon in boiling water briefly, it will crisp up better when you cook it.Pratt, KS

That bacon looks great to me.
Actually, any bacon looks great to me.Cincinnati, Ohio. Large BGE since 2011. Still learning. -

I'm wondering if you took your made weave, on paper, place in the microwave and pre-cooked some, then rolled, how that would do?
I think bacon is preference though. Some like it chewy some like it crispy. I'm a chewy guy, so what you have looks good to me.
Consequently, I think you could have bumped the temp more and possibly raised up high, it would have crisped up better.------------------------------

I'd go with thinner bacon - and/or once it's cooked - open 'er up and zoom that temp up and put a high heat sear to it...

This is on my short to do list right after starting cholesterol medicine!

Put the bacon on a sheet pan lined with foil and partially cook it for a head start. Let cool than wrap your fatty with the partially cooked bacon and have at it!

Very nice! I love cooking this meal for my family. I find using thinner bacon and a quick sear at the end will give you the crispiness you desire. The thinner bacon will make things challenging when prepping/rolling, but it's worth it. Enjoy! In cooking you have to have a what-the-hell attitude.
