Nice and simple Blackstone breakfast. Potatoes, onion, peppers, sausage. Topped with a couple of eggs, roasted hatch chile and sour cream.

I'd be all over that!!! Unfortunately my wife of 51 years has suddenly decided she no longer cares much for eggs, though occasionally I can sway her with my Eggs Benedict. Sometimes I'll just fix myself a brunch rather than let the eggs in the frig get too old. I like your combo there!Re-gasketing the USA one yard at a time!
