Inside of Egg turned gray

I did a cook a cook a week ago of some smoked Brussels sprouts with onions and bacon. I know some people don't like Brussels sprouts, but we do, and they were delicious! Anyway, last night I opened the Egg to clean it, and the inside was sort of a dark gray. No smell, didn't rub off. It isn't mold because it as been hot and dry here. I didn't use any weird fuel, just Fogo. Egg temp was only between 300 and 400. Are the Brussels sprouts giving off some strange gas that is discoloring my Egg? If so, can the military adopt it for some nefarious use? I am cooking some tri-tips tomorrow, and I will check it after the temp stabilizes to see if the gray is gone. Hopefully I won't poison myself and my guests.

    Is you egg new? It's normal for the ceramic to darken with creosote/food deposits. Most eggs appear black, unless you do a high-heat cook/clean burn.

    Brussel Sprout have been known to cause people to let off "strange gas", but its usually quite smelly. Could be the grey color in your egg. LOL!!!!!!!!

    I think it may be the smoke from burning lump charcoal that's turning the ceramic gray.

    Dunno about the gray. But the sprouts look great!!

    Sorry, the Egg was black before this cook. It is almost two years old.

    When you cook brussels in your egg, what temperature/duration to you use?  I'm curious to try this..

    I don't think Fogo is made from white ash. Yuk, yuk, yuk!

    I cooked them at around 200 until they were tender - maybe two hours. Then I cranked the heat to 400 or so until the browned up a bit, maybe another hour. I didn't really time it. They were pretty darn good, and actually better the second day.

    Those look delicious! And I will definitely try that cook! Did you halve the sprouts first? As far as the gray, I have no idea.

    I'm guessing it is the ash from the burnt lump. About 5 years ago I was using Wicked Good and the lump was sourced in South America and I noticed a grey residue on my plate setter and fire box / ring. If I am not mistaken Fogo is also sourced in South America. Different tree species than North America.

    I use Fogo and have never gotten the ash. If you are that concerned, do a burn off. Go get some cowboy and let her rip.

    Getting ready to fire up the beast. I did take a couple of quick pics. I rubbed my fingers in the dome and the ash came off. It is sort of interesting to me. I normally only do low and slows, with a rare 400 to 500 degree cook. I have never seen the dome this color of the Fogo this color. This was from the same bag as my last few cooks. Well, maybe the color will disappear, and I can kiss my ash goodbye.
