Monday Night Wings

The weather held up here in Central Florida (usually raining every time I wanna egg in the early evening) so decided on some wings. I did not set them out overnight uncovered in the fridge to dry out so was a bit concerned, however I separated them, threw them in a zip loc bag with some DP Mole, and fired up the egg. Used the 30-20-10 at 375 indirect method found here in this forum (sorry but didn't remember which post I got it from) and they turned out perfect. Skin was crisp and the meat was moist. No pics of the plating, they were devoured as soon as they were brought in.
