Roquefort Lamb/Beef Burgers a la Spotted Pig

Tonight I tried to replicate April Bloomfields burger from the spotted pig in NYC. I took a couple creative liberties including adding caramelized onions and doing a mix of ground round and lamb, but it closely follows http://www.seriouseats.com/recipes/2010/04/the-spotted-pigs-chargrilled-burger-at-home-recipe.html
Turned out delicious and went very well with the red blend. Happy Friday everyone!

Man that is a stellar looking burger. I notice it didnt shrink much during cooking which is a nice bonus.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.
