A few days late on this post, but it was one amazing meal for my brother's birthday. Started with an 8# bone in prime rib. Dry aged for 43 days.
Here she is at the start of slicing.

I cut them about 2 inches thick, then trimmed up some of the dry outside. Plan on grinding this in some burgers later.

All ready to go. Seasoned them with some Holy Cow.

Reverse seared over @nolaegghead 's potatoes au gratin, so the potatoes caught the dripping meat juice.

Money shot.

Forgot the plated pic due to consumption of cold beverages, but then remembered. Here's the mess of meat, potatoes, and some sauteed brussels sprouts. Threw in a knife, fork, some more Irish whiskey. Whatever. This meal was heart stopping good.
