Get an A-maze-n smoker maze so that you can try some cold smoking. Nuts. Salt. Cheese. Water for ice cubes. Chocolate. Etc. This will open a whole realm of possibilities for you.

Somebody posted pineapple marinated in Fireball whiskey, rubbed with brown sugar and grilled. If you can get fresh oysters, put them on the grill until they pop open and add Tabasco and lemon juice.

I like to cook chicken halves a different way. Some them for about 1.5 hrs at 250 to get some smoke, then cover tightly in an alum foil pan and add some apple juice. Leave on for at least 2 more hrs and your will have excellent pulled chicken with apple/smoked tastes. This is how we make our chicken for chicken salad, excellent. If you check out HeavyG's postings, he has probably posted a cook of it.

+1 for lamb chops. The t-bone ones. Saw packs today at Costco $8/lb that were nice. Lightly coat with olive oil, kosher salt, rosemary, garlic, etc. Sear like a thick steak no more than med rare.

Lots of great suggestions here. Thanks for all of the input! On a side note; it was pointed out that I didn't list pork tenderloin. Don't know how I overlooked that, but I've grilled and smoked it a number of different ways and it's one on my regulars. Looking forward to trying some of these.Calhoun, GA - LBGE

Probably the most "left turn at the lights" dish I've done is Vietnamese smoked duck with pineapple and grill charred veg, all done on the LBGE
