Costco Brisket

Was at Costco in Ringgold earlier... a wrinkle I had not seen.  Whole packer- choice not Prime for 2.79 lb.  BUT- at checkout get 10.00 off per package.  Thoughts ?

My wife picked up a packer at costco the other day.  I noticed it too was choice.  I think it was 2.59 per pound.  It is in the fridge.  I was used to getting prime from costco but they went away.  They only had flats available.  Happy to see packers back.  With my brisket skills, I need all the help I can get.  Hopefully a choice yields good results.

I'm only able to get choice packers locally. I've managed to nail numerous consecutive cooks with them and have never cooked a prime. My next cook will be one to compare as I have a 16# SRF Gold in the freezer.

Dang @dsrguns - go big or go home right there.  Talk about skipping a couple of grades.  Some get a bit wound up when they first cook SRF.  Always remember the process is the same and the friggin cow drives the cook.  Enjoy that one and expect a whole lot of rendering for the cook.  FWIW-
And to get back on the topic:  Given where our Costco is with prime packer prices ($3.99/lb) that is a good deal.  Enjoy the cook and eats.

Actually, I went over to the other cooler where the prime meat was and they had the flats only in choice. Don't remember the price.

Butcher at my local Costco said they still get a case or 2 of prime briskets a week but they go fast. I found one a couple weeks back gonna go it this weekend. My store has had the choice regularly for the last month or so but haven't tried one yet. No matter what they will be great to grind for burgers.

You know I will. My local Costco doesn't carry prime packers so "choice is all I've sourced. Don't get me wrong, I've been quite happy with the results so far. I'm confident enough now with the cooks so the "gold" is next in line. When the time comes I will be monitoring the cook a little closer. From what I've gathered I can expect the SRF to finish a little quicker than the choice but as you are well aware of,"The friggin cow drives the cook".
