Friday night steak

So went to the butcher and picked up this "Cowboy" steak at 2.85lbs, cooked it at 240 till it hit 120 then pulled it and got the egg to 650. Threw it back on for a 1:30 each side, cause it was 3" thick, and it was perfect. Oh rubbed it with Meat Church Holy Cow, my favorite cook. Thank you for looking
