Grilled chicken omelet.

Diced, grilled chicken, onions, peppers, and a little salsa sauteed in olive oil then stuffed into a cheese omelet. Served with a biscuit and some tomatoes because, hey, why not?

    And yesterday was spam, eggs and cheese and tomatoes, topped with black bean and corn salsa. I enjoy breakfast.

    Looks good.  In all the omelets I've ever had, I don't think I've ever had a chicken one.  Hope is was as good as it looks!

    I like just tossing stuff together and seeing how it come out. Had leftover grilled thighs, so that was it. And it was surprisingly good, helped of course with the onions, peppers and salsa. Heck, onions, peppers and salsa help just about anything.

    I love a chicken thigh with my eggs and potatoes. Bacon is the Sunday brunch treat meat, it's a dietary thing.
