Fish Tacos Tonight (Sorry Photo Heavy)

My Son asked for Fish Tacos tonight, picked up what I needed on the way home and had fun putting this together.  Here is how I did it...

 

Black Beans

 

Scallions chopped and combined with Olive Oil and sautéed for 10 minutes

 

Add Beans, cover and cook on low for as long as you can (I cooked for 90-100 minutes). Last 10 minutes uncover.

 

Pineapple Salsa

 

- ¼ Onion Finally chopped

- 1 Red Pepper Finally Chopped

- 1 Orange Pepper Finally Chopped

- ½ Cup Pineapple Finally Chopped

- ½ TSP Fresh Lime Juice

- Fresh Cilantro (to your liking)

- Mix and let sit for 1 hour

 

Lettuce

 

            Chopped Lettuce

 

Corn

 

            Boil Corn

            Grill on Egg for 5-10 minutes 400 degrees

 

Tilapia

 

            Thin Coat of Olive Oil

            Dash of

                       Chipotle Pepper

                        Garlic Powder

                        Onion Powder

                        Salt

                        Fresh Ground Pepper

                        Lime Powder (Made my own and it rocks)

                        Paprika

            Grill on Egg (400 Degrees) on Cast Iron Pan until done

 


Combine to your liking. The Family had fun making Tacos with what they liked.
