Sea Trout Recipe?

I took an inshore trip down in Florida this past weekend and brought home some spotted sea trout fillets. Anyone ever eaten them and have any good methods to cook them?

Speckled Trout, just scale, filet, batter them with Zatarin's Fish Fry and fry them.

I like to cook it like regular Trout.
Aluminum foil, oil, lemon slices, salt and pepper. My dad likes dill. I usually toss in capers.

If you want to bread them, crush up a traditional honey & oats granola bar and use that. Sea Trout's flavor is very different from fresh water trout.Apollo Beach, FL

You are in for a treat either way you fix them. If you fry them I would suggest you cut the fillets in one inch strips. You will not be disappointed and folks will be wanting more! Enjoy!Large BGE
