Pork Collar

Bought a half a pig from a local farmer and while loading up the freezer, found a pork collar.  Never even heard of that.  Anyone have any experience with one and what to do with it?  Thanks!

    First, you are in for a treat. There are a few approaches with this cut. One option is to slice it into Steaks and grill. About 145 internal is ideal. The secound approach is to cook it as a roast low and slow. Pull it at 165-170. Rest and then cut into steak size portions. At this point, either eat, or you can sear for Crust in a cast iron pan with some butter and olive oil.
