OT - Best meal of the summer so far, and no meat in sight.

Following a kind visit from a neighbor bringing goodies from her garden, my wife declared tonight veggie night and it was delicious. Here is the run down:
freshly sliced cucumbers and onions
fried squash
green beans
sauteed eggplant, tomato and onion
fried white corn with peppers, onion and bacon (OK, a tiny amount of meat for seasoning, with the drippings used in the squash and green beans too)
roasted sweet potatoes
coleslaw
biscuits

if that's how vagitarians eat, then I could convert. Looks really fulfilling.Richmond and Mathews County, VA. Large BGE, Weber gas, little Weber charcoal. Vintage ManGrates. Little reddish portable kamado that shall remain nameless here. Very Extremely Stable Genius.

You always make veggies look great! I have a zucchini crust veggie pizza on right now. That's the best I can do with veggies.

I suppose you are right, but this was so good I did not miss the ribeye at all. Fresh garden veggies, especially the first few of the season, are extra good. Brings back childhood memories of a simpler time when Grannie made the best food ever.blasting said:

That looks wonderful! My parents had a huge garden when I was a kiddo, reminds me of some of those summer meals.Wisconsin, lbge, MM, kab, pig tail flippers, bear claws, and more rubs than I will admit to.
