Turbo ribs and a black bean/cucumber salad.

Turbo ribs (quick, easy, juicy and tasty) served with a black bean/cucumber salad and some corn. Very tasty and filling Monday evening meal.
The ribs were cooked indirect at 350 with apple wood for smoke for two hours. I did not even remember to pull off the membrane, but they were fine. Very tender, a bit of a tug to the bite instead of fall-off-the-bone.
The salad was a can of black beans, drained, fresh out of the garden cucumbers (hard to get any fresher than that), diced Vidalia onion, grape tomatoes, shredded sharp cheddar cheese, a pinch of salt and pepper and ranch dressing. Balsamic dressing would have worked well with this salad too. Maybe better than ranch, will try it next time. The corn was just canned corned, nothing special.

Interesting combination for that salad!

I wish I could take credit for it, but I got the idea from Southern Living magazine. They used red kidney beans, but since I did not have any of those, I just used black beans instead.
