Jimmy Buffet Concert Pulled Pork

Got a question for you pros out there, the Jimmy Buffet concert is this Saturday and I plan on doing a 7lb butt for our group. I have to leave by 9:00 AM on saturday so I was thinking of doing the butt at 250 for 2 hours per lb making it a conservative 14 hours. I start at 6:00 PM on Friday and hoping its done by 8:00 am Saturday morning, I believe giving myself 2 hours per pound, I should be able to reach the 200 degree mark in that amount of time.

Question: Provided my temp is correct as well as the time, is it acceptable to FTC for 4 hours?

    Totally acceptable to FTC for that long, and even a few hours more if necessary.

    good news is, if it's not where you need it by 7am (in the high 180's) then bump it up to about 325-350 for the last hour.

  • If you can attend a buffet show and not have a blast you need to get checked out asap. Great environment at his concerts. Especially the outdoor shows. Have fun and good luck with the cook.

    You are correct, we try and see him as much as possible and the best part of his show is the environment in the parking lot. All of the great scenery is there.

    Just fill the empty space in the cooler with other towels to limit heat loss.  I've used a $20 cooler I picked up at Ingles for the past few months as my FTC box and I've held butts for 6-8 hours in there with no problem.  Still dang-near too hot to touch and the bone pulled easily.  Nothing like pulling that meteorite out and plopping it on the table in front of everyone and pulling that bone easily out.  Then having them watch with awe as you pull the porky goodness in front of them!

    Do you know where in the lot you all will be?  I might be able to place a call to get a "visitor" who also loves pulled pork!

    Watch out pulling your porky goodness in public. It's kinda frowned upon.

    @DoubleEgger have no idea yet just know we are gonna get there early which means we'll probably be closer to the main entrance, all the way to the right of the parking lot entrance. We try and get a spot near the port-a-let's as you walk up to the long sidewalk that leads to the gates.

    @thetrim every time we see a show at the amphitheater we tend to forget the actual show but remember the tailgating. BTW love your comments in that Covfefe thread!!!

    Thanks Bud.  I've only been to the amphitheater a couple times: Kenny Chesney and one other.  I have to agree w you.  We're headed for Dirks Bentley in a couple weeks. June 16 I think.

    Butt is on and if my timing and temp is right I'll yank it for FTC at 8 am and pull it at the concert.
