Salmon ideas?

i have a 2.5# hunk of skinless salmon. Guests are coming for dinner in 3.5 hours. Any suggestions on how to wow them? I'm obviously looking for simple. Smoke or no smoke?

I go no smoke. Just make a salmon glaze with honey. That's my go to

I have done a few on cedar planks soaked in white wine with maple syrup and (kahlua or gran marnier) mixed, little sweet but great in my opinion

I use that same recipe every time I make salmon, and my guests always rave it's the best salmon they have ever eaten in their life. I don't get a whole lot of cooks right, but that one is a home run every time. I've even had people say I should open a restaurant after eating it!

Thanks for all the tips. I ended up whipping up my own concoction: juice of 1 orange, 1/2 lime, soy sauce, honey, salt and pepper. Marinate for 20-30 minutes. Cooked, indirect at ~350 on a double layer of HDAF fashioned into a shallow pan. Sliced Texas 1015 onions on the bottom, then the salmon drizzled with more marinade, then thinly sliced lemons on top of the salmon. Sadly, no pictures...I was too busy entertaining. The dinner turned out great: salmon, rice, fresh from the garden peas, and freshly baked sourdough dinner rolls.Large (sometimes wish it were an XL) in KS

Chris Lilly does has a bacon crusted salmon recipe. Do a quick google search.

I cook my salmon on cedar planks. I make a maple syrup/brown sugar/bourbon glaze and apply during the cook. Turns out pretty good.
